With Yogurt and Mint
1 med sized cucumber
1-cup plain yogurt
¼ cup fresh chopped mint
3/8 tsp salt
1/8 tsp cayenne pepper (optional)
Peel cucumber, half lengthwise and scoop out seeds. Dice into cubes. Toss all together and serve. May make up to two hours ahead. Refrigerate.
