Veggie Chili

2 Large onions-Diced

2 Red Onions – Diced

2 Yellow peppers – Diced

4-5 garlic cloves – minced

2 tsp whole coriander seeds

2 tsp whole cumin seeds

2 tsp dried oregano

4-6 Tabs Ancho Chili Powder

28oz can Crushed Tomatoes

1 small bitternut squash peeled and cubed

Half a cup tomatillo salsa (green Salsa)

1 Quart vegetable stock

3 cans beans drained and rinsed (Kidney or Black or both)

1 lb frozen corn

  1. Sauté onion, add red and yellow peppers, cook 5 min.
  2. Add garlic and spices, cook briefly
  3. Add Chili powder, cook briefly
  4. Add tomatoes, squash, tomatillo salsa and some salt
  5. Add Stock and simmer.  Let simmer till squash is almost tender
  6. Add beans and Corn
  7. Simmer 15 min longer
  8. Adjust spices as needed.
