2 Large onions-Diced
2 Red Onions – Diced
2 Yellow peppers – Diced
4-5 garlic cloves – minced
2 tsp whole coriander seeds
2 tsp whole cumin seeds
2 tsp dried oregano
4-6 Tabs Ancho Chili Powder
28oz can Crushed Tomatoes
1 small bitternut squash peeled and cubed
Half a cup tomatillo salsa (green Salsa)
1 Quart vegetable stock
3 cans beans drained and rinsed (Kidney or Black or both)
1 lb frozen corn
- Sauté onion, add red and yellow peppers, cook 5 min.
- Add garlic and spices, cook briefly
- Add Chili powder, cook briefly
- Add tomatoes, squash, tomatillo salsa and some salt
- Add Stock and simmer. Let simmer till squash is almost tender
- Add beans and Corn
- Simmer 15 min longer
- Adjust spices as needed.
